Loaded Hummus

Have a resolution to eat better this New Year? This loaded hummus recipe with olives, cherry tomatoes, and sliced cucumbers is a fresh and flavorful way to start.

WHAT YOU’LL NEED:
2 cups hummus
1/4 cup kalamata or green olives
1 1/2 cups cherry tomatoes
1/2 cup sliced cucumbers
1 small red onion
2-3 pepperonicini peppers, sliced
1 clove garlic, peeled and minced
1/2 teaspoon oregano
1/4 cup olive oil
1 to 2 tablespoons finely chopped herbs
Salt and pepper to taste

Spread hummus onto a serving tray. Toss veggies with the olive oil, garlic, oregano and herbs. Spoon over humus and sprinkle with extra fresh herbs and crumbled feta. Serve with pita chips.
