Cranberry Chicken

The aromatic blend of citrus, cranberries, and herb-infused butter transforms this Cranberry Roasted Chicken into a culinary masterpiece, making it a standout centerpiece for your celebratory feasts.
What you need:
Whole chicken
2 cups cranberries
Fresh rosemary sprigs
Large Orange
Rosemary Butter:
1/4 cup butter
1 tablespoon balsamic glaze
2 teaspoons rosemary
1 teaspon sea salt
1/2 teaspoon peper
Orange zest
Preheat oven to 425 degrees F. Lay cranberries and rosemary in roasting pan. Mix the rosemary butter ingredients and then carefully apply under the skin of the chicken (careful not to break the skin). Place chicken over the cranberries and then squeeze the juice of a quartered orange over it and nestle around the legs. Roast chicken for 45 minutes. Reduce the heat to 350 degrees F and roast another 45 minutes. Serve with cranberries spooned over the top.
